It was my friends birthday on 07/29/12 and instead of baking a cake I made him a chocolate pot de creme. It was a delicious twist on a B-day celebration. So I cheated a little with this recipe to make it a little easier. I place one 16oz store bought hot fudge and brought it to a simmer, added 2 1/2 cups of heavy cream and brought to a simmer again. In a separate bowl I whisked 3 egg yolks together and slowly added a cup full of the hot mixture ro bring the eggs to temp then added the eggs to the chocolate mixture. I filled ramikins and cooked in a custards at 325 degrees in a water bath for an hour. Custard will be slightly giggly. I let custard come to room temp, about 45 minutes and place in fridge for 3 hours. Once I was ready to serve I topped with fresh wipped cream and chopped nuts. Also as a slight spin you could drizzel caramel on top and make it a turtle chocolate pot de creme. But just a plain pot de creme is delicious on it's own, since it is such a rich dessert. Enjoy!
